Perhaps you’ve been buying kimchi for $14 a jar at the supermarket and wondering if you could save money making it yourself. Or you have a garden surplus of cabbages and want some ideas of how to preserve your vegetables.
If this sounds like you, join Chef Wendy Joyce, owner of Savour Cooking School and passionate fermenter, Saturday February 11 for a two-hour workshop making traditional Baechu (cabbage) kimchi.
Fermentation is one of the oldest ways of preserving; it's a beautiful process that connects us to the land where our food is grown, connects us to healthy microbes that support our health, and connects us to each other when we gather together to make food that nurtures the overall health of our families and communities. It's also surprisingly simple and easy to get started! All levels are welcome as this is a basic workshop suitable for total beginners.
You will need to bring a large glass jar or 2 ideally 2ltrs with a clip top for your Napa Kimchi and also a grater (the boxy stand-alone type is easiest to use). You will need to do the first step of the Napa Kimchi recipe (the brining) at home on Friday evening. Don’t worry, it’s super easy. We will send you an email once you’ve signed up with a step by step guide on where to get your cabbage, how to sterilise your jars and brine the cabbage.
During the workshop, Wendy will show you how to make kimchi following a basic recipe. You’ll each make your own jar to take home with instructions of how to keep an eye on it while it’s fermenting and how to store it. She’ll also bring a sample of the kimchi that was made beforehand for you to sample what yours will taste like after it’s had a chance to ferment. Wendy will also touch on gut health and why eating fermented foods is so good for your overall physical and mental health.
